Using consumer science to improve healthy eating habits


Sebbene i consumatori abbiano la possibilità di prendere decisioni informate sulla qualità e quantità di alimenti utili ad uno stile di vita sano, nell'Unione Europea si è registrato un aumento dei problemi sanitari legati alla dieta causati prevalentemente da cattive abitudini alimentari, che determinano ad esempio sovrappeso, obesità e altri disturbi.

Il progetto “CONSUMEHealth. Using consumer science to improve healthy eating habits” è finanziato dal programma Horizon 2020 Marie Skłodowska-Curie Actions e verrà svolto presso la Cornell University (USA) per un periodo di 24 mesi e presso il Dipartimento di Scienze degli Alimenti e del Farmaco dell'Università di Parma nei successivi 12 mesi. Infine, il know-how acquisito sarà divulgato attraverso pubblicazioni, seminari e corsi.

L’obiettivo del progetto è di studiare le motivazioni e i comportamenti dei consumatori durante le loro scelte alimentari, in particolare quelle che conducono ad uno stile di vita sano e un’alimentazione corretta. L’obiettivo finale è fornire raccomandazioni “evidence-based practice” per gli stakeholder dell’industria alimentare, enti pubblici e legislatori al fine di sviluppare e comunicare soluzioni innovative. Le domande di ricerca saranno: Quali tipologie di informazioni sugli alimenti sono trasmesse più facilmente alla popolazione? Quali sono i cambiamenti del micro-ambiente (dove avvengono le scelte alimentari) più efficaci nel modificare il comportamento dei consumatori (ad es. presentazione del cibo, nomi più attraenti, etc.)? Quali sono le preferenze individuali, i livelli di coinvolgimento, le aspettative, l’interesse per un determinato argomento (ad esempio la nutrizione) che influenzano maggiormente le scelte alimentari verso un modello di alimentazione più sana ed equilibrata? Quali sono le maggiori differenze tra i risultati ottenuti da metodologie diverse (ipotetica vs non ipotetica) e come queste tecniche possono essere integrate per migliorare la “food consumer science?
