Inzichten uit de consumenten wetenschap om eetgewoontes te verbeteren

 

Ook al kan de hedendaagse consument geïnformeerde keuzes maken over het type en de hoeveelheid voeding om zich een gezonde levensstijl aan te meten, is er in de laatste jaren door de Europese Unie een toename in het aantal dieet-gerelateerde gezondheidsproblemen geconstateerd, veroorzaakt door ongezond en overmatig eetgedrag. Het beoogde doel van de Marie Sklodowska-Curie Action (MSCA) is enerzijds om te begrijpen wat de consument drijft gezondere voedingskeuzes en anderzijds om bewezen aanbevelingen te doen aan beleidsmakers en belanghebbenden. Dit heeft als uiteindelijk doel om met innovatieve win-win situaties te creëren en zo eetgewoontes te verbeteren.

Deze MSCA zal bestaan uit een onderzoek van 24 maanden vanuit de Cornell Universiteit (partner organisatie). Hier zullen gedrag economische studies uitgevoerd worden door middel van het afnemen van interviews, lab en veld experimenten (hypothetisch en non-hypothetisch). Workshops en cursussen op gebied van onderzoeksmethoden voor de voedingsconsument zullen waardevolle trainingen zijn. Ook zullen er bezoeken plaatsvinden aan conferenties, belanghebbenden en andere onderzoeksinstituten (zoals Michigan State Universiteit, die al gepland staat). Als laatste zal de terugkomst bij de Universiteit van Parma faciliteren om voort te bouwen op de opgedane expertise om zo lesvaardigheid te verbeteren en bevindingen te verspreiden onder verschillende belanghebbenden.

Geïnspireerd door de bevindingen van de MSCA en om de impact van de uitkomsten van het onderzoek zo groot mogelijk te maken, ben ik van plan om public engagement activiteiten te organiseren, een boek te publiceren dat bedoeld is voor het breder publiek en artikelen te publiceren in peer-review journals voor de voedingswetenschappers, de landbouw economen en de beleidsmakers die geïnteresseerd zijn in gezonde eetgewoontes.
