Using consumer science to improve healthy eating habits

Verbraucher sind heute mehr denn je dazu in der Lage informierte Entscheidungen darüber zu treffen, welche Nahrungsmittel am besten für einen gesunden Lebensstil sind. Dennoch wurde in der Europäischen Union in den letzten Jahren ein Anstieg von ernährungsbedingten Gesundheitsproblemen verzeichnet. Das Ziel dieser Marie Skłodowska-Curie Action (MSCA) ist erstens zu erfassen, wie Verbraucher die Entscheidung für den Konsum von gesunden Nahrungsmitteln treffen und zweitens wissenschaftlich fundierte Empfehlungen für Politik und Interessengruppen auszusprechen, welche innovative Lösungen zur Verbesserung der Essgewohnheiten entwicklen und kommunizieren können.

Im Rahmen dieser MSCA ist ein zweijähriger Aufenthalt an der Cornell University  (Partnerorganisation) geplant. Es werden verhaltensökonomische Studien durch Interviews, Labor- und Feldexperimente (hypothetisch und nicht hypothetisch) durchgeführt. Desweiteren bilden Workshops und Kurse zu methodischen Herangehensweisen bei der wissenschaftlichen Untersuchung von Verbraucherverhalten im Zusammenhang mit Nahrungsmitteln eine gute Grundlage für die weitere Forschung. Darüber hinaus ist der Besuch von Konferenzen, Partnerorganisationen und Forschungsinstiuten (z.B. Michigan State University) bereits geplant. Mit Rückkehr an die Universität Parma kann auf die gewachsene Expertise aufgebaut und für Lehrinhalte genutzt, sowie Forschungsergebnisse unter Partnern geteilt werden.

Um den Einfluss der Forschungsergebnisse zu maximieren, ist eine Verbreitung auf drei Wegen, mit jeweils unterschiedlicher Zielgruppe, geplant: Veranstaltungen sollen die Gesellschaft vor Ort aktiv einbinden. Darüber hinaus ist ein Buch geplant, welches für die breitere Öffentlichkeit bestimmt ist. Außerdem werden die Ergebnisse in high-ranking und peer-reviewed akademischen Zeitschriften veröffentlicht, welche für die Nahrungsmittelforschung, Landwirtschaftsökonomie sowie die Politik von Nutzen ist.
